Chocolate Covered Cookies

Ingredients:

  • 200 g flour
  • 100 g ground almonds
  • 200 g butter
  • 100 g sugar
  • 1 vanilla sugar
  • 1 egg yolk
  • 1-2 tablespoon of rum
  • pinch of salt
  • 1 teaspoon of lemon juice
     

  • 100 g chocolate

Directions:

  1. In large bowl mix all ingredients (except chocolate). Cover and refrigerate at least 1 hour.
  2. On lightly floured surface, roll dough and cut into desired shapes with cookie cutters.
  3. In preheated oven to 200ºC bake cookies, 8 to 10 minutes or until edges are light brown.
  4. In small bowl melt chocolate and dip half of each cooled cookie into melted chocolate. Place on paper until chocolate is set.
